Kale Chips

Kale chips have become one of those trendy foods lately, and understandbly so. They are quite easy to make and yummy to boot!

Preheat oven to 300F.

The key to these is that the kale leaves have to be really dry when you start. Also, generally you have to remove the center rib, but I found when I made these using the kale we got this week that it wasn’t necessary, but I’d recommend it if you have other kale with a particularly tough stem.

  • 1 bunch of kale, washed and thoroughly dried
  • 1-2Tbs olive oil
  • Sea salt

Place the olive oil and kale in a bowl, toss to cover. Lay kale leaves in a single layer on cookie sheets and sprinkle with salt. Bake 20 min.

I like the recipe with 1c soaked raw cashews, 1/2 c nutritional yeast, juice of 1 lemon, 1 seeded red pepper all pureed. this is the “cheesy” flavor in the vegan cheese kale chips. I tad spicy.

This recipe was a big hit with my family of boys who aren’t usually very open to trying new veggie recipes!! So easy, healthy and great for snacking.
