Stuffed Pattypan Squash

UFO’s or squash? I love that Pattypan squash looks like a bright yellow flying saucer,  but while it’s shape is fun, how do you cook it? You can just slice it and sauté it like you would zucchini or yellow summer squash, or you could stuff it. I like stuffing it because it makes a super cute side dish that looks impressive if you have company coming over.

You simply slice off the top and save it, then scoop out the seeds and fill with your choice of fillings (think back to what you stuff peppers with). I would recommend something flavorful as the squash itself doesn’t impart too much. I made two different kinds Tuesday night, one filled with a rice and vegetable mix, another that had caramelized onion, feta, and egg (essentially a quiche baked in a squash). I think a really great flavorful sausage and mushroom stuffing would be awesome inside these as well.

To bake the squash, preheat the oven to 375. Add filling of your choice and bake for 30 min. After 30 min test the walls of the squash with a fork for tenderness (poke from the inside out, not through the skin). Depending on the size of your squash more time may be necessary. Enjoy!
