Carrots!

We should have a good supply of carrots the rest of the season. Raw carrots are great, and it’s also nice to have a number of ways to prepare them. Here’s a recipe that shareholder Kirstin L. shared with me last year – it’s delicious, easy and quick to make. What are your favorite ways to prepare carrots?

CUMIN GRATED CARROTS
This dish is very quick and simple to make. The carrots should still have a slight ‘bite’ to them after cooking so if you are serving this at a dinner party, assemble all the prepared ingredients and then cook them at the last minute. The raisins are not traditional, but taste good and are worth trying. Parsnips can be added or even used instead of carrots.

5 tablespoons oil
1 onion, chopped
3 cloves garlic, crushed
3 teaspoons cumin seeds, dry roasted and ground (I use the grocery store variety)
8 oz carrots, grated
2 tablespoons raisins
juice of 1 orange
salt and pepper

Heat the oil in a frying pan and cook the onion with the garlic until just starting to brown. Add the cumin and carrots and stir-fry for 3 minutes.

Stir in the raisins, rind and juice of the orange and season with salt and pepper. Continue to cook for 3 minutes over a medium heat.

Serve immediately.
